Ratatouille, the Food AND the Disney Pixar Film

During the summer, my kitchen can get pretty crowded with fresh vegetables.  This means I sometimes have to be creative with new recipes so nothing goes to waste.  I haven’t yet resorted to squash-chip-cookies or eggplant-cupcakes, but someday it may come to that.

Last summer I made my own interpretation of Ratatouille so we could have an at-home dinner-and-a-movie  that both saved us some money for an upcoming Disney Cruise AND got us in the mood for one of the cruise’s ports – in France!

I browsed in all my cookbooks and surfed my usual recipe websites (plus a few unusual ones as well) and nothing sounded exactly right, so I used bits and pieces of several recipes, threw in my own version of “getting fancy with the spices” and the results were quite tasty.  While Raymond and I are highly gluten tolerant omnivores, we regularly enjoy meatless meals and this turned out to be a great one.  I served the leftovers with some baked mahi-mahi the next day!
The veggies in this meal make a lot of juice which combines with tomato paste in the bottom of the baking dish to make a perfect sauce.  Served over pasta, you’ve got a healthy, light, and satisfying meal.  Grab a TV tray and press play.  Enjoy Ratatouille and Ratatouille at the same time!

Lisa’s Ratatouille

Ratatouille 4
  • 1 medium onion, diced
  • 2-3 cloves garlic, diced
  • 1 green onion, diced
  • Tomato Paste (use the 3 oz. or the 6 oz. can depending on how much sauce you like and how many veggies you use.)
  • 2T extra virgin olive oil + more for drizzling
  • 2t Herbs de Provence + salt and pepper to taste
  • pinch red pepper flakes
  • 3-4 Roma tomatoes, sliced
  • 1 eggplant, sliced
  • 1-2 zucchini, sliced
  • sliced mushrooms (optional)
  • A couple of dashes of red wine vinegar (optional)
  • freshly grated parmesan cheese
  • Pasta of your choice, cooked al dente

Preheat oven to 375 degrees.  Trace the top of the casserole dish you intend to use onto a piece of parchment paper – cut slightly inside the line to make a paper lid for your dish that will lay on top of the vegetables.  Sauté the onion and green pepper in 2T olive oil until onion is translucent – add the garlic and cook for two minutes more.  Stir in the Herbs de Provence and red pepper flakes.  Remove from heat and set aside.
Spread tomato paste in the bottom of casserole dish.  This is when I add a couple of dashes of red wine vinegar to the tomato paste.  I like the tangy addition to the sweetness of the tomato paste – but this is totally up to you.  (I’m sure it’s still delicious without the vinegar.)  Spoon about 1/3 of onion/pepper mixture over tomato paste.  Then begin spiraling sliced vegetables in a single layer – drizzle with olive oil, salt and pepper (to taste), top with parmesan cheese and 1/3 of the onion/pepper mixture.  Add one more spiral layer of veggies, drizzle with oil, top with the remaining onions and peppers, add more parmesan.  TAH-DA!

Now add the little parchment-paper lid and tuck your masterpiece into the oven for 40-50 minutes depending on how well-done you like your vegetables.  Be sure you scoop down into the sauce at the bottom of the dish when serving.

Disney Meals at Home

Many of you may realize that you can find a lot of Disney recipes online, some uploaded by Disney and some that have been worked out by fans, once they are home.

If you want a recipe while at a restaurant, just ask! Sometimes they have their most popular recipes printed up and ready to hand out. That is what I did at the Hollywood Brown Derby, I wanted to know how to make the Cobb Salad and here is the recipe I was given.

I love this brown derby shaped printed recipe. About 6 inches across and 4 inches high, printed on a decent quality of paper that I managed to keep flat in my day pack all day.


The recipe is printed on the back (of course) and while I have never followed it exactly, I have taken it out a few times and done my own version of a Cobb Salad. Now all of you can make it as well!

The Homemade Dole Whip (From 5/28/13)

A couple days ago, Nick came home with a sack full of ingredients and proclaimed that we were going to make Dole Whips! I was highly dubious. After all, Dole Whips are such a Disney experience. Is it possible to recreate perfection?

Ingredients
  1. 2 20 ounce cans Dole crushed pineapple with juice
  2. 2 tablespoons lemon juice
  3. 2 tablespoons lime juice
  4. 1/3 cup sugar
  5. 1 and 1/2 cups heavy whipping cream, whipped
Here are the directions:


Drain pineapple; reserving 2 tablespoons of the juice. Set aside in a small cup.



Place pineapple, lemon juice, lime juice, sugar and reserved pineapple juice in blender or food processor; cover and blend until smooth.



Pour into two 1-quart freezer zipped bags and store bags flat in freezer. Freeze 1-1/2 hours or until slushy. Whip your heavy whipping cream until stiff.




Stir pineapple slush gently into whipped cream until slightly blended, in large bowl. Return to freezer until completely frozen, about 1 hour. (thanks to Magical Recipes for the ingredients and directions)


So, is it everything we hoped it would be? Well, I personally would have only used 1 cup of heavy whipping cream or I wouldn't have drained the pineapple, because it didn't have the kick that a Disney Dole Whip has. But, it was delicious! The two of us couldn't possibly finish it all off in one sitting, so what did we do?


We filled up our Disney popsicle moulds with the rest so now we have 8 popsicles waiting for us when it starts to get really hot later this week!

My Favorite Lunch

Disney's Animal Kingdom has a great restaurant called the Tusker House. It was at one time a quick service restaurant. I would look forward to our visits to that park because I knew we would stop at Tusker House for my favorite lunch, the vegetable pita sandwich. Heavenly!

Imagine my disappointment when my husband told me one year (2007) that the Tusker House would be changing it's format into a buffet restaurant and their menu would obviously be altered drastically. I thought to myself, nothing could be a good as that veggie pita! Nobody will make me change my mind, I refuse to like the new place: I can be ridiculous and stubborn at times.

I wrote to them letting them know how heartbroken I was, that if I couldn't have the vegetable pita sandwich there, then maybe they could send me the recipe and I could make it at home? Well, Disney is accommodating with reasonable requests if nothing else, and I was immediately e-mailed back with a friendly letter letting me know that I would love the new Tusker Buffet and the recipe I asked for. Here is the recipe.

Ingredients:
1/2 clove garlic minced
2 Tbsp olive oil
1 Tbsp lemon juice
1 medium tomato quartered and thinly sliced
1 small cucumber, halved, seeds removed, thinly sliced
1/4 red pepper, seeded, thinly sliced
1/4 green pepper, seeded, thinly sliced
6 kalamata olives, pits removed, chopped
1/4 tsp Kosher salt
1/8 tsp ground black pepper
2 oz fresh spinach
2 oz feta cheese, crumbled
Pita, sliced

Directions:
Mix garlic, lemon juice and olive oil together. Keep separate. In large bowl toss tomatoes, cucumbers, olives and peppers together. Season with salt and pepper, add garlic dressing and toss. Taste and adjust seasoning. Finish by tossing in spinach and feta. Stuff your pita pockets with the mix. Enjoy!

The Tusker House Buffet is a wonderful place to take your family and friends. The staff there is super friendly and even though I still mourn the loss of my lovely vegetable pita sandwich, Tusker is a great place to go.
